Shrimp done right!

Ceviche:
half pound of de-veined medium shrimp, cut into small pieces
roasted yellow pepper, rough chop
half cucumber, diced
2 tomatoes, diced
half jalapeno, diced
half red onion, diced
3 limes, juiced
1/4 cup olive olive oil
1/2 cup fresh cilantro
2 garlic cloves, minced
sat and pepper to taste
Combine all ingredients, let sit for 24 hours
