Zucchini cakes

Since we have an abundance of zucchini i have made some cakes with shredded carrots. So simple one to one ratio of carrot and zucchini add 1 cup of flour after squeezing the moisture out of the veggies. Add one egg, add four till consistency is thick but still work able. Salt to taste, then fry them up, add anything to jazz them up, they are literally a blank canvas. You could try self rising flour to make it a bit more fluffy, let's not forget bacon makes everything better.
